Apple Cake
Here's a recipe for a great cake
that I tried not long ago.
The batter gets so stiff that you need to use your hands to mix
it
(which is admittedly a mess).
Sift together:
2 1/2 cups flour
2 teaspoons baking soda
2 teaspoons cinnamon
1 teaspoon salt
Mix together:
4 cups diced apples
2 cups sugar
1/2 cup vegetable oil
2 beaten eggs
2 teaspoons vanilla
1 cup chopped nuts
3/4 cup raisins or currants
Combine the two mixtures.
Batter will be very stiff and sticky, like glue.
Use either a 9" x 13"
pan or four, 6" x 3" loaf pans,
greased and lined with wax paper.
Bake at 350 degrees F. for 45-60 minutes, until done.
Lemon Ice Cream
Mix together:
juice of two lemons (or 4-5 small ones) - about 2/3 cup
1 teaspoon lemon extract or 1/3 teaspoon lemon oil
grated rind (zest) of two lemons
2 cups granulated sugar
1 quart half and half (and maybe some milk to make it less rich)
Put it into an ice cream freezer and crank until frozen,
or in some container in the freezer and stir intermittently until frozen.
